Want to Conquer the Holidays this Year? Eggnog

Tips to help you do just that.

Eggnog

5 cups fat-free FairLife milk
1 4-serving box vanilla instant pudding, sugar-free
1 tsp. vanilla or rum extract
1/2 tsp. ground nutmeg
Extra Creamy  Reddi-wip
Cinnamon

Combine milk, pudding mix, extract, and nutmeg in blender. Blend on high speed until smooth. Pour into glasses. Cover and refrigerate until thickened—about 30 minutes. Top with 2 Tbsp whipped topping and a sprinkle of cinnamon. Makes 5 servings.

 

Nutrition information per serving:  125 calories, 13 grams protein, 1 gram fat, 12 grams carbohydrate, 360 mg sodium

You’ve worked hard to eat better, move more and put new coping skills in place. Here come the holidays—the hardest time of the year for most to stick to healthy habits. Rather than overindulge with abandon, look for ways to experience the joy of the season in a new and improved way.

Look at the holidays a little different—rather than a focus on excessive foods, strive to connect with people. Focus on gratitude. Think about new ways to treat yourself and your family that honor your healthy lifestyle. Spend time on those people and things that energize you and limit those that are depleting. Feel great this holiday season!

Do You Want to Conquer the Holiday’s? Pumpkin Cheesecake

Layered Pumpkin Cheesecake

2 packages (8 oz. each) light cream cheese, softened
1/2 cup Splenda, stevia or erythritol
1/2 tsp. vanilla extract
½ cup egg substitute
1/2 cup canned pumpkin puree
1/2 tsp. ground cinnamon
1 cup Cool Whip Light

Preheat oven to 325 F. In large bowl combine softened cream cheese, Splenda, and vanilla. Beat with electric mixer until smooth. Blend in egg substitute. Spray the bottom of a glass baking dish sparingly with non-stick spray and spread one cup of batter into the bottom.

Add pumpkin and spices to remaining batter and stir until blended. Carefully spread pumpkin layer over first layer. Bake for 35-45 minutes until center is almost set. Allow to cool and then chill for several hours or overnight. Serve with a dollop of Cool Whip Light. Makes 8 servings.
